 I made the ragu a day in advance and apart from making this dish a bit less daunting, it also allowed the flavors to mingle a bit better I think. The bechamel is quite quick to make, but you could also infuse the milk in advance.

It's from a different culture and cuisine and isn't server in my country. What better reason to try it out!? Maybe one day I will get to try the real deal, but for now, this will do :) .
