Change the readthedocs-config yaml to install from
pyproject.tomlinstead.Used reference: https://docs.readthedocs.io/en/stable/config-file/v2.html#python-install
Why?
The latest doc builds failed because we moved the
requirements.txtintopyproject.toml.
