This PR expands the database construction pipeline with a step that downloads the current UniProt-version from this file "https://ftp.expasy.org/databases/uniprot/current_release/knowledgebase/complete/RELEASE.metalink" and extracts it. This version is then stored in the format "YYYY.MM" in the ".version" file.
This ".version" file is also included in the
suffix-array.zipanddatabase.zipfiles that are generated by the respective GitHub actions.
