[BREAKING] Update espp for LVGL v9 and refactor some components

Description

• Update espp submodule to have new lvgl v9.1 as well as other features and bugfixes
• Update gui to use espp::HighResolutionTimer for its task, just like menu
• Update color format for emulators for proper color display
• Update rom list to use roller for better performance, less intensive ram usage

Motivation and Context

• LVGL v9 has better APIs, longer term support, and (in the future) better performance
• Updated submodules include bug fixes, new features, and better performance

Building and running on esp-box and esp-box-3
