feat: add embedded schemas

Hello again, I didn't mean to update the original PR, but I took the opportunity to add embedded schema support as well as updating the Ecto version. This is working just fine in my use case, and I've tried to update the test suite accordingly. Hope it's useful! |

Hi, I love this library, but it's not working in current Phoenix / Ecto projects because of the outdated dependency. I've verified that this works on my repo and passes tests.
