PIMS-2090/2091/2092/2093: Update @mui/material,@mui/icons-material,@mui/x-data-grid,@mui/x-date-pickers to the latest versions

PIMS-2090: Update @mui/icons-material from version 6.0.2 to 6.1.0 in react-app
PIMS-2091: Update @mui/material from version 6.0.2 to 6.1.0 in react-app
PIMS-2092: Update @mui/x-data-grid from version 7.16.0 to 7.17.0 in react-app
PIMS-2093: Update @mui/x-date-pickers from version 7.16.0 to 7.17.0 in react-app

Updated all mui packages in one PR as these packages are dependent on each other.
Also, vite had to be updated from version 5.4.0 to 5.4.6 to upgrade these dependencies. The vite upgrade went smooth and the newer version is very light taking only 296 ms to bring up vite.
