Restored the docker edge build and CI, making use of the AI tags, and the current edge builds. This will result in our having edge- tags pushed to dockerhub, as per @DvirDukhan ask.
I'll issue a separate PR to carry over versioned variants (i.e 1.2-cpu or latest-cpu) if we go down that path, but it'll be based on this approach.
