Unfortunately, Apple has a weird limitation where they don't allow more than one external display to be connected to the M1 MacBook Pro. The one main workaround is the usage of a DisplayLink compatible dock, which I unfortunately don't have. However, that isn't too much of an issue with BetterDisplay anymore. While my implementation of another workaround is extremely janky, it seems to work really well after the some initial configuration. All I need to do is create a dummy screen using BetterDisplay for my external monitor, stream that monitor via Parsec onto my second monitor which is powered by a Windows desktop, and use a software KVM like Synergy (Barrier's cool too) to allow for my mouse and keyboard (connected to my Windows PC). YMMV depending on your LAN connection (even with my gigabit LAN, there is still some amount of latency, albeit negligible), but it works marvelously!
