I'm using mopidy-mobile via the built-in web browser (Jelly) in LineageOS 16
In portrait mode, the volume slider is quite short, thus it is hard to exactly set the volume.
It would be useful to be able to set volume in steps with extra buttons.
The "volume low" and "volume high" icons left and right of the volume slider might be an obvious place for these buttons.

Have you tried the physical volume buttons? They should work as described. Never felt the urge to duplicate this functionality in the UI.

The physical buttons just set the device volume on the mobile device. This is via the browser, not via the specialized app.

I’m using mopidy-mobile via the built-in web browser (Safari) in my iPhone 13 and the volume slider is small and hard to use in general but especially for a precise setting. I’d rather have it in vertical position but to have +/- is the ideal. I guess on every mobile device the volume slider is hard to use because nowadays the phones are large, i.e. high, hence the most defavorabile position is the top.
