I was playing around with the spreadsheet editor and I noticed in the session history that it counts highlighting cells as adding characters. I've only added 10-20 characters for the life of the spreadsheet, but it has recorded just under 500. Highlighting cells is currently my guess as to what's being recorded, since I did not play with the formatting.

Session history is agnostic to the actual content, and SN is agnostic to editor content. It might be that when you select a cell, it persists that state in the note content, triggering a save event, and thus triggering a session history entry.
