However, once I click away to another file and then click back, my edits have gone away!
If GitX was intended to support inline text editing of this sort (which would be quite useful for when you don't want to have to spawn a TextEdit window just to fix a typo), then the bug is that the edits made in this fashion don't get saved back to the file-on-disk. Alternatively if GitX is not intended to be used as a text-editor, then the bug is that it's possible to edit the text in what should be a read-only text view.
This occurs on my Mac Pro running OS/X 10.11.6.

With a little bit of clicking around I can get GitX to allow me to edit the text in the file-content view of the GitX GUI, as shown in this video:
