Add Ubuntu 24.10 oracular build to release

Jellyfin Media Player playback (mvp) does not work anymore after upgrading to Ubuntu 24.10 oracular. No build (deb) is available for it.

Describe the solution you'd like
Add oracular (deb) build.

Tested with minimal workflow:

• branch / test.yml - based on release / main.yml: only build-ubuntu with tag: [noble, oracular]
• workflow with successful build for oracular
• build artifact (direct link) with deb package - attachment: jellyfin-media-player_1.11.1-1_ubuntu-oracular.zip
• Installed and tested under Ubuntu 24.10: playback works

  apt install jellyfin-media-player_1.11.1-1_amd64-oracular.deb

Describe alternatives you've considered
Flatpak works on 24.10.

Additional context

I can create a PR for the updated full workflow (PR-candidate with full workflow based on release), but am not entirely sure which branches need to be updated: master, release, prerelease, test?

Of cause, a Jellyfin PPA for 24.10 is missing, too, but that is not as relevant for the server.
