does this project support Kailh Choc v2 switches? or only v1?

No, it only supports Choc v1.

I don't think the V2 switches ever really caught on - to the point that there is no hotswap socket available for them. If it's cherry keycaps you're after, there's tons of choc adapters. If it's the low travel your after, Kailh, and Akko both have speed switches with a 1.1 mm actuation distance - which is actually lower than the choc v2.
