Endpoint Plugins

Instead of endpoint config file and environment variables, may I suggest the use of a plugin system. Choose from a list of plugins (OpenAI, Grok, Anthropic etc), each with options/settings that are native to the endpoint.

Advantages:

1. These can be hosted separately, and thus be available to download independent of the stable version of LibreChat.
   For example, Xai Grok API was recently launched. Right now, we need to wait for the next LibreChat build for official
   support.

2. The community and/or the API vendors themselves can create, and upload them. Likely within hours.

3. If you have different api accounts with say OpenAI for business and personal use. You can load the OpenAI plugin twice, and name them accordingly.

4. Simplify the UI. You only see the Endpoints your interested in.
