There is no Influx DB V1 image 1.11.8 at https://hub.docker.com/r/bitnami/influxdb/tags
The latest one is 1.8.5 but 1.11.8 already exists: https://docs.influxdata.com/influxdb/v1/about_the_project/release-notes/

As announced at #75671, only one branch of InfluxDB (branch 2 in this case) is available in Bitnami, the rest of the branches will be only available as part of Bitnami Premium.

Yes, any branch supported by the upstream project and considered stable/latest/LTS is part of Bitnami Premium. The whole branch InfluxDB 1 is present there. Unfortunately, there is not a place listing the different supported versions.
