Phase out the use of Serilog

Is your feature request related to a problem? Please describe.
Right now, we heavily lean on Serilog in our messaging systems because we use Arcus.Observability to enrich the logs with correlation. This makes Arcus.Messaging rather 'fat' in terms of packaging.

Describe the solution you'd like
It would be nice if we rethink our messaging solution in a more lightweight approach, which only builds opon Microsoft and Service bus technology, and does not include anything extra out of the box.

Additional context
With the arrival of OpenTelemetry, we might rethink our Arcus.Observability solution, too. In the end, maybe we should step away from as much in between Arcus library references as possible, as we do not have the budget (anymore) to provide that much support/updates.
