Is it possible to update the message laid over the waitress [1] during a progress update? Since the message is specified when constructing the waitress, I'm not sure.

It's currently not possible, I'm going to flag that as possible enhancement. To be scoped out.

as an alternative, is it possible to update the message for other widgets ? maybe hostess?
