Add an example to illustrate emittance reconstruction from a pepperpot measurement using a periodic transverse aperture.

As part of this PR, consider revisiting documentation labels xmax and ymax.

Should these be more descriptive, eg. horizontal half-aperture and vertical half-aperture?
