Can Monk update the MongoDb driver to at least 3.5.7? Even newer would be great, but there are some pretty big fixes that Monk needs to get.

Correct me if I'm wrong, but Monk doesn't define a specific driver in it's package.json. The mongodb driver requirement is (currently) ^3.2.3, which means it'll work with any driver version equal or later than v3.2.3, and before v4.
